Best Banana Bread!
Also, in this recipe, if you're gluten-free you can use almond flour as a 1:1 ratio instead of using all-purpose flour. You can substitute applesauce for the eggs as well if you like.
First, pre-heat your oven to 350 degrees and lightly grease a 9x5 inch loaf pan with cooking spray, you can use the avocado cooking spray as well. I used my small loaf pan or you can make muffins too it will be a lesser cooking time if you do use them.
Second, in a mixing bowl cream the butter and sugar (I use dark brown sugar), for 3 minutes until light and fluffy making sure to scrape the sides of the bowl.
I had a few helpers mashing the bananas, make sure to mash well. I also, chop pecans but you can use walnuts if you'd rather.
Next, with the mixer on low, add the eggs one at a time mixing well after each. If you don't want to use eggs substitute with applesauce you use 1/4 cup for each egg. Then, add vanilla and your mashed bananas, that you're daughter did such a good job mashing!! Mix on low until combined.
With the mixer running slowly pour in the deliciousness... I mean buttermilk mix until combined. Make sure to scrape the sides down and mix a little more.
In another bowl, sift the flour, baking powder, baking soda, salt and cinnamon, once sifted whisk.
Then add the dry ingredients to the wet and mix until combined. Make sure not to over mix or your bread will be tough. Fold in the chopped nuts.
Pour the batter into your pan of choice and bake for 55-60 min if in the loaf pan as suggested. If using a small loaf pan like myself the loaves were done in 35 min. If using muffin pans the time will be between 30-40 min.
Delicious!!! I really hope you try this recipe, these particular loaves were devoured within 24 hrs. Nothing lasts long around here especially this banana bread!

* 3 large overripe bananas, mashed
* 1/2 cup buttermilk, room temp.
* 2 cups all-purpose flour or almond flour can be substituted
* 1 Tbsp baking powder
* 1/4 tsp. baking soda
* 1/2 tsp. salt
* 1 tsp. cinnamon
* 3/4 cup chopped walnuts, you can use pecans if you'd like
DIRECTIONS:

- In a mixing bowl cream the butter and sugar for 3 min. until fluffy making sure to scrape the bowl down.
- While mixing add the eggs one at a time mixing after each just until combined. Add applesauce in place of eggs here if you would like. Add vanilla and mashed bananas and mix just until combined
- While the mixer is running slowly pour in buttermilk. Scrape sides down and mix until combined.
- In another bowl sift the flour, baking powder, baking soda, salt, and cinnamon, then whisk together.
- Add the dry ingredients to the wet and mix on low just until combined do not over mix. Fold in the nuts.
- Pour the batter into the greased pan and bake for 55- 60 min., the muffins at 30-40 min.
