Homemade Graham Crackers
I truly grew up with these graham crackers and I also remember making these with my mom as a little girl. Funny story, when I was in Kindergarten my mom made these for my class as a treat for Valentine's Day I believe. She made them into hearts and made a little hole at the top and ran red yarn through to make them into necklaces. She also hand piped each child's name onto each individual heart. I was so excited to bring them to class the next day! When it came time to pass the treats out I noticed the kids started to put their graham cracker heart necklace on and they started to EAT them!!! I was so upset that they ate them, even though that's what they were for, I knew how hard my mom worked on them and I was so proud of those treats I thought they shouldn't be for eating! Ha! I was a funny girl I know!! That's my favorite memory of these graham crackers. I hope you all try this delicious family recipe and make some of your own memories while making them!
Here are a few of the ingredients we will use in the recipe, it,s actually a pretty simple but so much healthier graham cracker.
First, you will want to mix your dry ingredients together in a large bowl, whole wheat flour, all-purpose flour, baking soda, baking powder, and salt.
Next, cream the butter and dark brown sugar together in a mixer. I like to make sure it's really mixed so on all my recipes I mix the butter and sugar between 3-5 minutes.
After the butter and sugar is mixed add honey and vanilla. I use a raw honey that's specifically from our local region but you can use whatever honey you would like. Make sure to mix well.
Next, alternate between a little of the flour mixture and a 1/2 cup of milk. Just go slowly add a little of the flour mixture then mix and then add a little of the milk and then mix and repeat until both are mixed in.
Once it's all mixed together the batter needs to chill overnight in the refrigerator.
When it's all chilled and ready to bake pre-heat oven to 350 degrees. Divide mixture into quarters then start to roll the dough out onto a well-floured surface.
Roll each quarter into a 15x5 inch rectangle. From there you can either cut into the traditional rectangle-shaped graham cracker or use any cookie cutter you desire. I always my heart-shaped cookie cutter because I love hearts!!!
Poke holes with a fork if you'd like onto each cracker, then sprinkle with cinnamon sugar. I mix 3 tablespoons of sugar and 1 teaspoon of cinnamon.
Next, bake between 13-15 minutes. When done let them cool and enjoy!!
Ingredients:
* 2 cups whole wheat flour
* 1 cup all-purpose flour
* 1 tsp. baking powder
* 1/2 tsp. baking soda
* 1/4 tsp. salt
* 1/2 cup butter
* 3/4 cup brown sugar
* 1/3 honey
* 1 tsp. vanilla
** 1/2 cup milk use alternately with dry ingredients**
Topping mixture:
* 3 tablespoons sugar
* 1 teaspoon cinnamon
Combine all dry ingredients in a mixing bowl. Next, cream the butter and sugar mix between 3-5 minutes. Then, add the honey and vanilla and mix until it's combined. Then, alternate between a little of the dry ingredients and 1/2 cup of milk until both are well combined in the batter. After everything is well mixed chill dough for 24 hours in the refrigerator.
When done chilling divide dough into quarters and roll dough into 15x5 inch rectangle onto a well floured surface. You can cut them into rectangles or use a cookie cutter. Next, poke holes on the crackers using a fork and sprinkle with the cinnamon sugar. Mix together in a small ramekin 3 tablespoons of sugar and 1 teaspoon of cinnamon. Bake between 13-15 minutes until done. Let cool on a cookie rack and enjoy!
